About Sebastian Mazzola (Former Chef at The Prestigious El Bulli)
Born in Argentina, he began his culinary journey as a chef at El Bulli, famous as the world’s most challenging restaurant to secure a reservation. Following this, he took charge of 41°, an exclusive cocktail bar offering El Bulli’s cuisine in tapas form, and later contributed to crafting innovative menus for Pakta, specializing in modern Spanish fusion, as well as Ticket, an affiliated restaurant. Upon gaining independence, he founded “Cooking In Motion,” concentrating on the synergy of food and sake pairings, hosting numerous captivating events worldwide that celebrate the union of gastronomy and sake.
El Bulli, 3-Michelin Star Restaurant in Spain
El Bulli, a renowned restaurant located in Catalonia, Spain, gained international acclaim under the leadership of Chef Ferran Adrià. Founded in 1961, the restaurant became a pioneer of molecular gastronomy, showcasing an extremely unique approach to cooking. El Bulli was known for its innovative techniques, such as the use of foams, gels, and liquid nitrogen, which resulted in dishes featuring unique textures and flavors.
Despite its tremendous success, Ferran Adrià decided to close El Bulli in 2011, shifting its focus to become a foundation for culinary research and experimentation. Nobuaku Fushiki is a prominent instructor for fermentation classes and a driving force behind the popularity of “fermented food” in Japan. With expertise in Italian and Japanese cuisine spanning two decades, he developed a deep fascination with koji (fermented grains or soybeans) and its transformative abilities. Beyond culinary pursuits, he actively contributes to the revitalization of local communities and supports the survival of breweries across Japan through his dedication to people, culture, and fermentation.
