Only shirasu caught at Iwaya Port on Awaji Island are used, and the freshness of the shirasu is preserved by freezing it immediately after landing. The raw shirasu rice bowl at Kaiou Market is made with only the finest ingredients, as selected by the veteran fishermen.
Awaji Island boasts the largest amount of shirasu caught in Japan. Raw shirasu of Awaji Island was honored with a gold award, “New Wave Award”, by All Nippon Specialties Award 2023 organized by Japan Tourism Culture Association. In addition, Awaji Island shirasu is registered as one of “Pride Fish”, certification by National Federation of Fisheries Co-operative Associations.

Raw whitebait bowl / Nama shirasu don is characterized by its smooth, chewy texture and sweetness, which cannot be experienced with Boiled shirasu / Kamaage shirasu. It is recommended to eat it together with Tosazu (vinegar seasoned with dashi soup made with dried bonito). Don’t forget to try it as soon as possible as it is seasonal!
