For just two exclusive evenings this summer, one of Japan’s most celebrated chefs will bring his philosophy of seasonal cuisine to Awaji Island. At THE PASONA natureverse retreat, guests will have the rare opportunity to enjoy a special dinner personally prepared by Chef Hisato Nakahigashi, the fourth-generation owner of Kyoto’s renowned Japanese inn and restaurant “Miyamasou”, recently awarded three Michelin stars in the MICHELIN Guide Kyoto Osaka 2026. 

Miymasou highlights bounties from mountains and rivers in its dishes based on “Tsumikusa (meaning hand-picked herbs) cuisine,” inspired by an ancient tradition of herb gathering, a pastime enjoyed by Heian-Era (794~1185) aristocrats. 

This is more than a fine dining event. It is an intimate culinary journey where every ingredient, every story, and every course reflect Japan’s deep respect for nature and the changing seasons. With limited seating available each evening, guests can experience Chef Nakahigashi’s cuisine in an atmosphere designed for conversation, discovery, and unforgettable memories. 

Meet Chef Hisato Nakahigashi 

Chef Hisato Nakahigashi is internationally recognized for preserving and evolving the centuries-old traditions of Japanese wild herb cuisine. As the fourth-generation chef of Miyamasou in Kyoto, he has dedicated his career to celebrating the natural rhythms of the seasons through carefully selected wild herbs from mountains, vegetables, freshwater fish, and regional ingredients. 

His culinary philosophy centers on allowing nature to speak through every dish. Rather than overwhelming ingredients with elaborate techniques, Chef Nakahigashi highlights their original flavors, creating an experience that feels both refined and deeply connected to Japan’s landscapes. His achievement of three Michelin stars in the MICHELIN Guide Kyoto Osaka 2026 reflects decades of craftsmanship and innovation.  

A One-Night-Only Menu Inspired by Awaji Island 

For this exclusive event, Chef Nakahigashi will personally prepare a special full-course dinner created only for these evenings. Using carefully selected seasonal ingredients, including the finest produce from Awaji Island, the menu will showcase the island’s rich agricultural heritage through the lens of Kyoto’s traditional culinary artistry.  

Unlike a typical restaurant dinner, guests will dine in an intimate setting where the chef shares the inspiration behind each course, the stories of the ingredients, and the philosophy that shapes his cooking. Every dish becomes part of a larger narrative connecting the mountains of Kyoto with the fertile landscapes of Awaji Island.

Guests can also choose an exclusive overnight package at THE PASONA natureverse retreat. After dinner, relax in an ocean-view guest room featuring a private natural hot spring bath, then wake to peaceful coastal scenery and breakfast overlooking the sea.
