SUNx2 Sparkling Summer Festival, Awaji Island West Coast – Ristorante Scuola Edition
Ristorante Scuola is delighted to offer a limited-time summer special course meal featuring an abundance of ingredients from Awaji Island. Enjoy fresh, seasonal fish such as Awaji Island pike conger, high-quality lean Awaji beef, and an elegant dessert inspired by the sunflower. From the first course to the last, each dish is crafted with meticulous attention to detail with vibrant colors for an unforgettable dining experience.
Sweet Corn Flan with Saffron Jelly
This Western-style chawanmushi (steamed egg savory custard) features firm, rich eggs with yolks from the popular Kitasaka Poultry Farm on Awaji Island. Enhanced with a seasonal summer vegetable corn puree, this dish is served cold, offering a refreshing summer twist. A delicate saffron jelly adds an elegant accent, making this chawanmushi a perfect blend of tradition and innovation.
Fresh Lemon Flavor Awaji Fish Carpaccio
Ristorante Scuola takes pride in using the freshest fish from Awaji Island, sourced daily for the best flavor. The natural umami of the fish is perfectly complemented by the tangy zest of locally grown lemons. The selection of fish varies each day, so diners can savor the best of the Seto Sea.
Vegetable Pasta with Awaji Pike Conger
Pike conger is a summer food, rich in vitamin A and chondroitin, an element of cartilage known to be good for health and beauty. Pike conger from Awaji Island is carefully caught one by one using a unique fishing method called “hamo longline”. The golden fish is grilled to enhance flavor and served in a cream pasta dish with vibrant summer vegetables.
Roasted Awaji Beef with Sesame-flavored Red Wine Sauce, Yellow Pepper Puree, and Salsa Verde
The highlight of this summer menu is a vibrant main dish featuring roasted Awaji beef lamb sirloin, a great chance to enjoy a taste of what may be the world’s rarest type of beef. The dish is elegantly topped with a red wine sauce infused with sesame, and complemented by a salsa verde made with yellow pepper puree and Italian parsley. This colorful presentation and harmonious blend of flavors make for a truly delightful dining experience.
Seasonal Dolce (Mango)
To conclude your meal, try the elegant dessert inspired by the summer bloom, the sunflower. This exquisite mango mousse, artfully crafted to resemble a sunflower, is accompanied by mango sorbet and fresh mango, offering a delightful taste of summer in every bite.
