  At Oh-SOBAR, our kappō dining style brings guests closer to the chef and the seasons, and focuses on fresh, handmade soba noodles, seasonal dishes, and carefully prepared Japanese cuisine inspired by Awaji Island’s land and sea.

  Our chefs use local ingredients such as akamoku seaweed and chōmeisō to create colorful, flavorful soba and refined seafood and mountain dishes that honor tradition while offering a modern dining experience.

About Courses

At Japanese soba restaurant Oh-SOBAR, a meal would start with appetizers that are meant to enhance the natural umami in each ingredient, like chawanmushi with Awaji onions and broad beans, and abalone that’s steamed and served over seaweed with soy dressing.
Next, seasonal dishes are beautifully prepared: grilled hamo, fresh sashimi, and a variety of tempura, crispy and hot.
Thus, every course expresses its true flavor in that season and presents the taste of refined traditional Japanese food.

Craftsmanship

  The soba noodles at Oh-SOBAR are made with close attention to detail so that every element contributes to flavor and character. The dough itself is a carefully balanced mixture of buckwheat flour with konjac, akamoku, or longevity grass (chōmeisō) that produces soba with strong flavors and aromas as well as colorful appearances.
  As an example, one of the essential components, akamoku, is a seaweed traditionally used in miso soup or vinegared dishes.

  Akamoku is high in dietary fiber, full of minerals, vitamin C, calcium, magnesium, and iron. Also helps alleviate constipation and promotes a healthy intestinal environment, making it an excellent ingredient for Oh-SOBAR’s health-promoting soba.
