Supervised by Nobuaki Fushiki, a well-known chef specializing in fermented food and Masayuki Okuda, one of World’s Top 1000 Chefs, the restaurant offers menus using vegetables grown on its own farm and other farms on the island as well as other fresh ingredients from the surrounding sea and mountains.
